  • 200 g oat flour<\/li>\n
  • 80 g oat flakes<\/li>\n
  • 120 g egg whites or 2 whole eggs<\/li>\n
  • 40 g sugar<\/li>\n
  • Zest of 1 lemon (lemonline), grated<\/li>\n
  • 1 teaspoon olive oil (mild or sunflower oil)<\/li>\n
  • 6 g baking powder<\/li>\n<\/ul>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n

    In a large bowl, mix the oil with sugar, egg whites, and the grated lemon zest. Add the oat flour, oat flakes, and baking powder, then mix until a smooth dough is formed. Roll out the dough to a thickness of no more than half a centimeter, then use a cookie cutter (mine is 5 cm in diameter) to shape the cookies. Place your cookies on a baking tray lined with parchment paper. Bake at 180\u00b0C (356\u00b0F) for 15 minutes.
