- 10 eggs<\/p>\n

- 500 g peeled almonds<\/p>\n

- 45 g potato starch<\/p>\n

- 250 g granulated sugar<\/p>\n

- 200 g white chocolate<\/p>\n

- 180 g olive oil<\/p>\n

- 20 g limoncello<\/p>\n

- Zest of 4 lemons<\/p>\n

- Juice of 4 lemons<\/p>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n

Whisk the eggs and sugar, then slowly add the oil and melted white chocolate (melt it either in the microwave or using a double boiler). Gradually mix in the almonds, which have been finely ground with the lemon zest, and the potato starch. (Use a food processor to grind the almonds to a fine consistency.) Grease a 20 cm baking pan with oil and dust it with potato starch. Pour the batter into the pan and tap it on the table to remove any air bubbles.
