An analysis conducted by the Department of Plant Production and Microbiology at Spain's Miguel Hernández University highlights how, due to their natural composition, lemon leaves can be highly beneficial to our body, supporting it in various situations. Lemon leaves, in fact, contain 1.16 mg of vitamin K, 0.27 mg of magnesium, and 14.51 mg of zinc. Approximately 100 grams of lemon leaves, therefore, provide a good amount of iron, an essential mineral for the production of hemoglobin—a protein found in red blood cells that carries oxygen from the lungs to different parts of the body. This makes lemon leaves a valuable ally for well-being. Their use, in particular, supports several functions. First of all, thanks to the presence of beta-bisabolene, lemon leaves relieve heartburn by naturally reducing gastric acidity and the burning sensation.

But their properties don’t stop there: they promote relaxation and help us sleep better, regulate blood pressure due to their anticoagulant effect, improve digestion with their antibacterial and anti-inflammatory action and are therefore recommended for preventing diarrhea, constipation, and flatulence, as well as for eliminating stomach parasites and detoxifying the liver, kidneys, and bladder. Lemon leaves are also valuable for our immune system: thanks to their high vitamin C content, they boost the body’s resistance to illnesses like coughs, flu, and colds, and help produce more white blood cells that are responsible for the immune system. But that's not all! Lemon leaves are a true elixir of youth: their antioxidant action helps delay cell aging.

“What a fragrance!” Culinary Uses Of Lemon Leaves

There are plenty of reasons to use lemon leaves. But how can we use them? Lemon leaves can certainly be employed in the kitchen. There are many lemon leaf recipes we can try. Similar to bay leaves, they are perfect for flavoring and perfuming dishes, from soups and stews to roasts, fish, desserts, and beverages.

In the preparation of soups and stews, the use of lemon leaves is similar to that of bay leaves: simply add them to the broth or cooking base and remove them at the end of cooking, when the dishes are ready to be served. For meat-based dishes, lemon leaves are always recommended: they give each recipe a fresher and more distinctive flavor without overpowering the taste, but rather enhancing it. For fish dishes, lemon leaves pair well with anchovies, trout, shrimp, and oysters. They can be used as an ingredient in fish stuffing to make it more fragrant and flavorful.

Infusion: A Recipe for Wellness

Lemon leaves can also be used to prepare highly fragrant infusions, herbal teas and digestives. These are natural, easy-to-prepare beverages with diuretic properties. Below is a recipe for a lemon leaf infusion for four cups.

Ingredients: 1lt of water; 20 grams of lemon leaves.

Preparation: Heat 1 lt of water to nearly boiling (95°C). Add the leaves ad let them steep for about ten minutes. Then filter and serve, adding a few drops of fresh lemon juice. Sweeten to taste.

Tip: for an even more effective digestive result, you can add two bay leaves (previously soaked in baking soda) to the infusion. A teaspoon of honey will enhance the taste while providing the mineralizing and soothing properties of this precious natural ingredient.

The fragrance of lemon leaves is surely something you already know. But together, we’ve seen how, beyond their delightful aroma, lemon leaves are truly versatile, functional and easy to use. If you’re inspired to try lemon leaf recipes, remember to choose leaves from untreated lemons to ensure safety and flavor. That way, you can use them fresh without hesitation.
