Dear Lemon Lovers, today we share with you the recipe for Lemon Caprese Cake, as proposed by "Severance Roma."
Ingredients:
- 10 eggs
- 500 g peeled almonds
- 45 g potato starch
- 250 g granulated sugar
- 200 g white chocolate
- 180 g olive oil
- 20 g limoncello
- Zest of 4 lemons
- Juice of 4 lemons
Whisk the eggs and sugar, then slowly add the oil and melted white chocolate (melt it either in the microwave or using a double boiler). Gradually mix in the almonds, which have been finely ground with the lemon zest, and the potato starch. (Use a food processor to grind the almonds to a fine consistency.) Grease a 20 cm baking pan with oil and dust it with potato starch. Pour the batter into the pan and tap it on the table to remove any air bubbles. Bake in a preheated oven at 170°C (338°F) for about 40 minutes.
