Grandma’s Oat and Lemon Cookies

Dear Lemon Lovers, today we bring you the recipe for Grandma’s Oat and Lemon Cookies.

Ingredients:

  • 200 g oat flour
  • 80 g oat flakes
  • 120 g egg whites or 2 whole eggs
  • 40 g sugar
  • Zest of 1 lemon (lemonline), grated
  • 1 teaspoon olive oil (mild or sunflower oil)
  • 6 g baking powder

In a large bowl, mix the oil with sugar, egg whites, and the grated lemon zest. Add the oat flour, oat flakes, and baking powder, then mix until a smooth dough is formed. Roll out the dough to a thickness of no more than half a centimeter, then use a cookie cutter (mine is 5 cm in diameter) to shape the cookies. Place your cookies on a baking tray lined with parchment paper. Bake at 180°C (356°F) for 15 minutes. Once baked, let them cool completely before enjoying.
